Olive oil

1 Shallot, peeled and sliced

Sprig of fresh thyme

1 Tbsp Butter

2 to 3 Tbsp chopped fresh chives

1 handful of Pea Shoots

Juice of ½ a lemon

½ a round of feta

Thinly sliced red onion to garnish
