Ingredients

Crust:

2 cups rice flour

½ cup tapioca starch

¼ cup sugar

½ teaspoon salt

1 cup chilled cream cheese

1 cup chilled unsalted butter

2 egg whites

 

Fruit Filling:

3 cups peeled and sliced Bartlett or Anjou pears (about 4 medium pears)

2 cups fresh or frozen cranberries

1½ cups sugar

2 tablespoons tapioca starch

2 teaspoons finely grated orange zest

1 teaspoon vanilla extract

¼ teaspoon ground allspice

2 tablespoons water, for brushing
